Learn How to Make a Refreshing Coconut Pie



Need a dessert to take to lunch or dinner with friends, but don't want to buy anything? This coconut tart from The Pioneer Woman website is a good solution.


Ingredients:

1 package of puff pastry

3/4 cup granulated sugar

1/3 cup cornstarch

1 tablespoon flour

1/2 teaspoon salt

1 can coconut milk

1 cup milk

5 egg yolks

1 and 1/2 cups grated coconut

2 tablespoons butter

2 teaspoons vanilla extract

For the icing

1 and ½ cups of cream

2 tablespoons sugar

1 teaspoon vanilla extract

Toasted coconut flakes


Directions

1- Roll out the puff pastry in a pie dish. Line the inside with baking paper, add dried beans and bake for 15 minutes. Remove the weight and leave to cool. For the filling, start by mixing the sugar with the cornstarch and salt in a saucepan.

2- Mix the coconut milk with the milk and egg yolks. Add to the sugar mixture. Cook over a medium heat until it comes to the boil. Leave for five minutes.

3- Mix together the grated coconut, butter and vanilla. Place the filling on top of the base. Leave to cool and refrigerate.

4- Prepare the icing. Whip the cream with the sugar and vanilla. Place on top of the afternoon and add the coconut shavings.
