You Shouldn't Keep Tomatoes In The Fridge. Find Out Why

Never know where to store tomatoes? Should they always be in the fridge? According to food experts quoted on Martha Stewart's website, you should never put them in the fridge. Why is that? It's all to do with science.

More specifically, tomatoes contain an enzyme that reacts to the cold and causes cell membranes to rupture, explains Gregory Lofts, food stylist and culinary producer. This causes the consistency to change and become softer.

"When you refrigerate a tomato, you're essentially taking away its flavor and texture," he warns. He also explains that "tomatoes absorb odors from other foods in the fridge very quickly, which can further degrade their quality and taste."

Maddy Rotman, former sustainability director at Imperfect Foods, explains that "tomatoes taste best at the peak of ripeness and when stored at room temperature".
