Recipe For 'Muffins' To Make The Most Of Almost Ruined Bananas

Ingredients: 

1 cup wheat flour 

1/2 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon cinnamon powder

1/2 teaspoon baking soda

1/2 teaspoon coarse salt

5 tablespoons melted coconut oil

1/4 cup brown sugar 

1/4 cup maple syrup

1 teaspoon pure vanilla extract

2 large egg whites at room temperature

1 1/2 cups mashed very ripe bananas (about 3 large bananas)

1/2 cup chopped walnuts optional


Method of preparation 

1- Place a rack in the center of the oven and turn it on to 205ºC. Line a 12-cup muffin tin with paper muffin tins. Then, in a medium bowl, mix together the wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt.

2- Meanwhile, in a separate medium bowl, mix together the coconut oil, brown sugar, maple syrup, vanilla and egg whites. Add the mashed bananas. Add the dry ingredients to the wet ingredients and stir until combined. Add the walnuts.

3- Divide the batter into the mold. Bake for 20 to 25 minutes. Leave to cool for 10 minutes, then remove the muffins to a wire rack to cool completely.
