Ingredients:
25g peeled ginger
4 tablespoons of apple cider vinegar and 1 tablespoon more
200 g basmati rice
320 g frozen edamame
1½-2 tablespoons tamari
2 avocados, pitted and sliced
1 large carrot cut into sticks or grated
50 g cherry tomatoes cut in half
¼ sliced cucumber
2 teaspoons of sesame oil
3 tablespoons toasted sesame seeds
Directions
1- Cut the ginger into very thin slices or grind it. Put it in a bowl with the four tablespoons of vinegar, one tablespoon of water and massage lightly to soften. Set aside.
2- Put the rice in a medium saucepan and add around 600 ml of water. Bring to the boil, cover and simmer for 15 minutes. Add the edamame, but don't stir them, cover and cook for a further seven minutes.
3- Remove the edamame from the rice and set aside. Pour the tablespoon of vinegar and half a tablespoon of tamari over the rice and stir well. Place the rice on a plate and spread out to cool quickly. Once cool, place in four bowls, top with the avocado, carrot, edamame, tomato and cucumber.
4- Remove the ginger from the vinegar and sprinkle it on top. Add the remaining tamari and sesame oil to the vinegar. Place a spoon over the bowl and spread the sesame seeds over the top.
