Jamie Oliver Shares a Foolproof Recipe for Spaghetti Bolognese



Many consider bolognese to be comfort food. Are you? You need to try Jamie Oliver's recipe as soon as possible. It's very simple and the British chef explains everything you need to do. 


Ingredients: 

500 g minced lean beef

500 g spaghetti

400 g canned chopped tomatoes

40 g Parmesan cheese

400 ml boiling water

1 tablespoon tomato puree

1 tablespoon balsamic vinegar/red wine vinegar

3 carrots

3 red onions

3 celery stalks

2 cloves of garlic

2 sprigs of fresh rosemary

2 slices of smoked bacon (you can also use pancetta)

1 low-salt bouillon cube

Olive oil to taste

Salt and pepper to taste 


Directions 

1- Peel and chop the onions, garlic, celery and carrots. Chop the rosemary leaves and, on a separate board, cut the bacon or pancetta into very thin slices. 

2- Then, in a large saucepan, heat a tablespoon of olive oil over a medium heat. Meanwhile, add the vegetables, meat, rosemary and garlic to the pan and cook with the lid slightly ajar for 10 to 15 minutes, stirring occasionally. 

3- Add the minced meat, stirring and breaking it up with a wooden spoon, then turn the heat up to high for about five to 10 minutes. Add the canned tomatoes, tomato puree, vinegar and bay leaves.

4- Dissolve the stock in the boiling water and add it to the pan. Stir everything well and bring to the boil.

5- Season the sauce with salt and pepper and reduce to a simmer. 

6- After an hour, remove the lid from the pan and let it cook for about 15 to 20 minutes. In the meantime, cook the pasta following the instructions on the package, making sure you leave a cup of the pasta water for later. Drain the rest and set aside.

7- Grate the parmesan cheese and taste the bolognese to check the seasoning. Remove the bay leaves and add a little of the pasta water to the mixture.

8- Serve the pasta and sauce in a bowl and top with a generous amount of Parmesan.
