Want something simple, quick and tasty for your next meal? You have to bet on the classic and infallible baked salmon. Just follow Epicurious' instructions.
Ingredients:
1 tablespoon of extra virgin olive oil and more for greasing
4 skin-on salmon fillets
Zest of 1 lemon
1 tablespoon chopped thyme
Coarse salt and freshly ground pepper to taste
Lemon slices (for serving)
How to prepare
1- Place a rack in the middle of the oven and turn it on to 135ºC. Line a baking tray with aluminum foil and grease it lightly with olive oil. Place the salmon fillets, skin side down, on the prepared tray.
2- Mix the lemon zest, chopped thyme and a tablespoon of olive oil in a small bowl. Spread the mixture over the salmon fillets. Season with salt and pepper. Leave to stand at room temperature for 10 minutes so that the flavors blend.
3- Bake the salmon in the oven for 15 to 18 minutes. Serve with lemon slices to squeeze over the top.
