Rainy days really call for comfort food. Such is the case with this pasta, cheese and sweet potato dish. The recipe is from the EatingWell website.
Ingredients:
2 cups of pasta
1 medium sweet potato
2 cups of cream
2 tablespoons flour
1 clove of garlic
1 and 1/4 cups grated cheddar cheese
1 tablespoon mustard
1/4 teaspoon mustard
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup peas
1 teaspoon olive oil
Directions
1- Cook the pasta according to the instructions on the package. Pierce the sweet potato with a fork and microwave for 10 minutes.
2- Whip the cream, add the flour and garlic and heat gently. Crush the sweet potato and add the cream. Add the cheese, salt, pepper and peas.
3- Put everything together in a dish, add a drizzle of olive oil and a little more cheese. Bake until toasted on top.
