Are you hungry and don't feel like cooking? There are simple, hearty and delicious recipes ideal for these moments. That's the case with this peanut and ginger scrambled tofu recipe recommended on EatingWell.
Ingredients:
5 tablespoons of water
3 tablespoons smooth natural peanut butter
1 1/2 tablespoons rice vinegar
1 tablespoon low-sodium soy sauce
1 tablespoon chopped fresh ginger
2 teaspoons of honey
3 medium garlic cloves, chopped
390 g firm tofu
2 teaspoons extra virgin olive oil
1/2 teaspoon salt
4 spring onions cut into slices
1 medium avocado cut into slices
2 tablespoons fresh coriander leaves
Preparation method:
1- First, in a small bowl, mix the water, peanut butter, vinegar, soy sauce, ginger, honey and garlic until you obtain a homogeneous mixture.
2- Drain the tofu and dry it with absorbent paper. Cut the tofu into eight pieces. Crush them into irregular pieces.
3- Meanwhile, heat the olive oil in a large non-stick frying pan over medium/high heat. Place the tofu in the frying pan in just one layer and season with salt. Cook, without stirring, for about five minutes. Carefully turn the pieces over. Cook, stirring occasionally, for seven minutes. Add the chives. Cook, stirring constantly, for another two minutes. Remove from heat. Pour the peanut-ginger sauce over the top and toss gently to coat the tofu. Transfer to a platter. Top with sliced avocado and cilantro leaves. Serve.
